Active Principles: Garlic is rich in organosulfur compounds, including diallyl thiosulfonate (allicin), diallyl sulfide (DAS), diallyl disulfide (DADS), diallyl trisulfide (DATS), E/Z-ajoene, S-allyl-cysteine (SAC), and S-allyl-cysteine sulfoxide (alliin). It also contains over 20 phenolic compounds, such as β-resorcylic acid, pyrogallol, gallic acid, rutin, protocatechuic acid, and quercetin. Additionally, garlic provides saponins, polysaccharides, and other bioactive compounds.
