Annatto is an orange-red food coloring and condiment derived from the seeds of the achiote tree. Native to the tropical regions of South and Central America, it is commonly used in culinary applications and cosmetics. The vibrant color of annatto comes from carotenoids, which are pigments located in the outer layer of the seeds.


Active Principles: The main phytoconstituents are carotenoids, apocarotenoids, sterols, aliphatic compounds, monoterpenes and sesquiterpenes, triterpenoids and volatile oils. Seeds have many carotenoid compounds, mainly apocarotenoid bixin, nor-bixin and other less important cryptoxanthin, lutein, zeaxanthin, and methylbixin.
